Vegan Shakshuka

This North African dish is bursting with sweet and spicy flavours. Shakshuka literally means “a mixture” and is made from simple, healthy ingredients.

Ingredients and Method

Ingredients

  • 400g butter beans in water
  • 5 medjool dates
  • 2 red onions
  • 3 garlic cloves
  • 780g chopped tomatoes
  • Handful fresh coriander
  • 1 sweetred pepper
  • 2 green chillis
  • 2 red chillis
  • 2 tbsp olive oil

Method

  1. Start by chopping the onions finely along with the garlic cloves and the dates (ensure you de-seed them first).
  2. Heat up 2 tbsp of oil (on a high heat) in a deep ceramic pot. Add the onions, garlic gloves, dates.
  3. De-seed the chilli peppers and sweet peppers, cut them longways into thin strips add them to the pot and stir continuously until everything is soft and golden brown.
  4. Add the 780g of chopped tomatoes to the pot, finely cut the coriander and add to the pot, bring the pot to the boil for 5 minutes and then cover with a lid and leave to simmer for a further 5 minutes.
  5. Drain the tin of butter beans and rinse, add them to the pot and cover for 5 more minutes until fully cooked.
  6. Add a touch of salt, more spices and additional garnishes if desired before serving.
