
Vegan Shakshuka


This North African dish is bursting with sweet and spicy flavours. Shakshuka literally means “a mixture” and is made from simple, healthy ingredients.

Ingredients and Method
Ingredients
- 400g butter beans in water
- 5 medjool dates
- 2 red onions
- 3 garlic cloves
- 780g chopped tomatoes
- Handful fresh coriander
- 1 sweetred pepper
- 2 green chillis
- 2 red chillis
- 2 tbsp olive oil
Method
- Start by chopping the onions finely along with the garlic cloves and the dates (ensure you de-seed them first).
- Heat up 2 tbsp of oil (on a high heat) in a deep ceramic pot. Add the onions, garlic gloves, dates.
- De-seed the chilli peppers and sweet peppers, cut them longways into thin strips add them to the pot and stir continuously until everything is soft and golden brown.
- Add the 780g of chopped tomatoes to the pot, finely cut the coriander and add to the pot, bring the pot to the boil for 5 minutes and then cover with a lid and leave to simmer for a further 5 minutes.
- Drain the tin of butter beans and rinse, add them to the pot and cover for 5 more minutes until fully cooked.
- Add a touch of salt, more spices and additional garnishes if desired before serving.
