
Honey & Pesto Salmon



A mighty tasty mid-week meal with minimal ingredients. Adding honey to pesto for an extra depth of flavour works wonders with Salmon.

Ingredients and Method
Ingredients
- 2 salmons
- 220g cherry tomatoes
- 2 tbsp pesto
- 1 tbsp honey
- squeeze of lemon
- ¼ tsp chilli flakes
- salt & pepper
Method
- Preheat the oven to 200C.
- Add the tomatoes and salmon, skin side down to a baking dish then season with salt and pepper.
- In a small bowl add the pesto, honey, lemon or lime juice and chilli flakes. Mix until well combined.
- Pour all the pesto mixture over the salmon and tomatoes so they are well coated.
- Leave uncovered and cook for 25-30 minutes, until the salmon is cooked through. After 15 minutes of cooking time, spoon the liquid over the tomatoes and salmon then return to the oven.
- Serve with rice and fresh greens then dig in.
