Honey & Pesto Salmon

A mighty tasty mid-week meal with minimal ingredients. Adding honey to pesto for an extra depth of flavour works wonders with Salmon.

    Ingredients and Method

    Ingredients

    • 2 salmons
    • 220g cherry tomatoes
    • 2 tbsp pesto
    • 1 tbsp honey
    • squeeze of lemon
    • ¼ tsp chilli flakes
    • salt & pepper

    Method

    1. Preheat the oven to 200C.
    2. Add the tomatoes and salmon, skin side down to a baking dish then season with salt and pepper.
    3. In a small bowl add the pesto, honey, lemon or lime juice and chilli flakes. Mix until well combined.
    4. Pour all the pesto mixture over the salmon and tomatoes so they are well coated.
    5. Leave uncovered and cook for 25-30 minutes, until the salmon is cooked through. After 15 minutes of cooking time, spoon the liquid over the tomatoes and salmon then return to the oven.
    6. Serve with rice and fresh greens then dig in.
