Ingredients and Method
Ingredients
- 2 large eggs
- 4 slices of bacon
- 4 sausages
- 1 tin of baked beans
- 1 large tomato, halved
- 2 slices of black pudding
- 2 slices of sourdough
- 1 potato, peeled and grated (for the hash browns)
Method
- For the hash browns, squeeze the grated potato into a clean kitchen towel to remove excess moisture. Season with salt and pepper. Shape the grated potato into small patties and fry until golden brown and crispy, about 3-4 minutes per side. Set aside and keep warm.
- In the same frying pan, add the bacon slices and sausages. Cook the bacon until crispy, about 3-4 minutes on each side, and the sausages until cooked through, about 8-10 minutes, turning occasionally.
- In the same pan, add the black pudding slices and cook for 2-3 minutes on each side until crispy.
- Place the tomato halves, cut side down, in the pan. Cook for about 3-4 minutes until slightly charred and softened.
- Pour the baked beans into a small saucepan and heat over medium heat until warmed through, about 5 minutes.
- Crack the eggs into the pan and cook to your liking, whether sunny-side up, over-easy, or fully cooked. Season with salt and pepper.
- On a large plate, arrange the hash browns, bacon, sausages, black pudding, tomato halves, and toast. Add a generous spoonful of baked beans and top with the fried eggs.
